The El Hierro cuisine can be defined as tasty and nutritive.

Fish is important, as for any island, together with different pulse stwes, stock and potatoes.

Fish can be fried, boiled or grilled: the typical garnish consist of "papas arrugadas" (wrinkled potatoes),  wich are small potatoes boiled in salted water. Typical sauces are red and green "mojo" , based on vinegar, oil, garlic, salt, spices and... every cook's secret.

Rabbits and goats are also typical in local meals


Gofio 

A  great deal has been written about gofio and its role in Canary Island cuisine since ancient times. This toasted cereal flour can be mixed with different proportions of milk, water, soup or wine to make dough, or be roasted with fat and almonds.  Gofio can be used to prepare breakfast, condiments or desserts. It is also the base of a wide range of sweet meats involving almonds and figs.


Quesadillas, the cheese and the wine


The famous quesadillas are sweet pastry based on cheese. Local cheese is largely produced in a central plant and has become an important article of our exports, as well as wines with Designation of  Origin produced at the El Golfo cooperative and in privated wine cellars along the island.
